Pork Bulgogi Tacos

Serve these tacos with a side of cilantro rice and guacamole for an easy and delicious taco night!

Ingredients

  • 1 lb pork tenderloin sliced (1/4”)
  • 3 cloves of garlic, minced
  • 1 tbs grated ginger (1 inch piece or ¼ tsp ground)
  • ¼ cup low sodium soy sauce
  • ½ Asian pear, grated or small red apple
  • 1 tbs toasted sesame oil
  • 1 tbs light brown sugar
  • 2 tbs EVOO or coconut oil
  • 1/4 cup each diced red onions and colored peppers
  • 2 green onions, chopped (for garnish)
  • 12 corn or flour taco tortillas
  • 1/4 cup toasted sesame seeds

Instructions

1. In a small bowl mix the soy sauce, grated ginger, sugar and garlic.
2. In a large bowl mix meat and grated pear.
3. Refrigerate 30 minutes.
2. In a large zip lock combine meat and sauce mix.
3. Marinate meat for 30 minutes or best if overnight in refrigerator.
4. In a large wok or skillet, brown meat and set aside.
5. In the same skillet, stir frye the vegetables.
6. Add meat and mix well.
8. Drizzle with toasted sesame oil.
7. Add more marinade if desired.
8. Using two tortillas per taco add the meat, garnish with green onions and sesame seeds.
