Arroz Vago
This is my beloved father’s famous recipe.
Ingredients
- 5 to 7 oz Spanish chorizo
- 1 1/2 lb lean ground beef
- 2 cans beef consomé
- 2 cups uncooked white rice
- Butter to coat the pan
- 1 can French onion soup
- 1 cup frozen soup vegetables
- 6 Bacon strips
- 8 oz tomato sauce
- 5 oz water
Instructions
1. Preheat oven to 350 degrees. 2. Grease a 9 x 13 pan with butter. 3. In a bowl combine tomato sauce, consomé, water and French onion soup. 3. In a skillet brown the beef with the Spanish chorizo. 4. Rinse the rice and evenly spread in the pan. 5. Top rice with beef and chorizo mixture. 6. Add the vegetables. 7. Cut bacon strips in half and lay over the vegetables. 8. Cover with the liquid. 9. Bake at 350 approximately one hour..
